Pumpkin Spice Cupcakes
I love making these for Fall. They are my favorite! Everyone in my family loves these when it comes to Thanksgiving. I am also including a great frosting recipe that equals out the sweet autumn flavors.

Ingredients
- Cupcakes :
- 1 cup of flower
- 1 teaspoon of pumpkin pie spice
- 1 teaspoon of backing powder
- ½ teaspoon of salt (fine)
- ½ teaspoon of ground cinnamon
- ½ cup of brown sugar
- ½ cup of sugar
- 1 and ¼ cup of olive oil
- 2 eggs
- Frosting:
- 8 oz of cream cheese (room temp.)
- ½ cup of unsalted butter (room temp.)
- 4 cups of powder sugar
- 1 teaspoon of vanilla extract
- (optional) ¼ teaspoon of almond extract
Instructions
- Mix all dry ingredients by hand in a medium size bowl.
- Mix all wet ingredients in a different bowl
- Now gradually add the dry mixture to the wet mixture. It is best to do with a electric mixer.
- Preheat oven to 350 degrees F
- Bake for 15-20 minutes or until a toothpick is inserted into the middle of the cake and comes out clean.
- Let the cupcakes cool completely before adding the frosting.
- Frosting:
- In a electric bowl mix the butter and cream cheese until smooth.
- Now mix in the powder sugar one cup at a time.
- Measure and pour in the vanilla extract and almond extract if you want.
- Now put into a piping bag with and tip you choose.Or you can use a butter knife and smear it on top.
