Pumpkin Spice Cupcakes

I love making these for Fall. They are my favorite! Everyone in my family loves these when it comes to Thanksgiving. I am also including a great frosting recipe that equals out the sweet autumn flavors.
Ingredients
  • Cupcakes :
  • 1 cup of flower
  • 1 teaspoon of pumpkin pie spice
  • 1 teaspoon of backing powder
  • ½ teaspoon of salt (fine)
  • ½ teaspoon of ground cinnamon
  • ½ cup of brown sugar
  • ½ cup of sugar
  • 1 and ¼ cup of olive oil
  • 2 eggs
  • Frosting:
  • 8 oz of cream cheese (room temp.)
  • ½ cup of unsalted butter (room temp.)
  • 4 cups of powder sugar
  • 1 teaspoon of vanilla extract
  • (optional) ¼ teaspoon of almond extract
Instructions
  1. Mix all dry ingredients by hand in a medium size bowl.
  2. Mix all wet ingredients in a different bowl
  3. Now gradually add the dry mixture to the wet mixture. It is best to do with a electric mixer.
  4. Preheat oven to 350 degrees F
  5. Bake for 15-20 minutes or until a toothpick is inserted into the middle of the cake and comes out clean.
  6. Let the cupcakes cool completely before adding the frosting.
  7. Frosting:
  8. In a electric bowl mix the butter and cream cheese until smooth.
  9. Now mix in the powder sugar one cup at a time.
  10. Measure and pour in the vanilla extract and almond extract if you want.
  11. Now put into a piping bag with and tip you choose.Or you can use a butter knife and smear it on top.
